Baked Brie in Puff Pastry with Apricots

BAKED BRIE IN PUFF PASTRY WITH APRICOTS 

½ cup apricots

3 tablespoons crushed almonds

8 oz. French Brie, round

1 sheet puff pastry

½ cup cold water

2 to 3 tablespoons Grand Marnier

  1. Combine chopped apricots, Grand Marnier and water in a small saucepan. Simmer in pan until mushy.  Add nuts.
  2. Slice Brie in half.  Pour apricot mixture over bottom layer and place top half back on.  Wrap in puff pastry.  Make design on top to suit occasion with left-over pastry dough, and bake in a preheated 375 degree oven for 10-15 minutes or until golden.  Make sure there are no wet spots on puff pastry and that it is golden over entire surface.  Cool for 5 minutes and slice and serve with crackers.
