BLUEBERRY SOUR CREAM MUFFINS

¼ cup unsweetened applesauce

¾ cup sugar

2 large eggs

1-1/4 cups all purpose flour

½ teaspoon baking soda

¾ cup good sour cream

1 cup fresh blueberries (if out of season, use frozen but rinse well)*

  1. Preheat oven to 400 degrees.
  2. Combine applesauce with sugar and eggs. Mix well.
  3. Sift together flour, baking soda and add to applesauce mixture. Mix just until combined. Stir in sour cream and then carefully fold in blueberries by hand.
  4. Spoon batter into paper liners set in muffin tin. Papers should be ¾” full. Bake for 12 to 15 minutes in regular oven. 8-12 in convection oven. Makes 12.
