02 Feb BLUEBERRY SOUR CREAM MUFFINS
¼ cup unsweetened applesauce
¾ cup sugar
2 large eggs
1-1/4 cups all purpose flour
½ teaspoon baking soda
¾ cup good sour cream
1 cup fresh blueberries (if out of season, use frozen but rinse well)*
- Preheat oven to 400 degrees.
- Combine applesauce with sugar and eggs. Mix well.
- Sift together flour, baking soda and add to applesauce mixture. Mix just until combined. Stir in sour cream and then carefully fold in blueberries by hand.
- Spoon batter into paper liners set in muffin tin. Papers should be ¾” full. Bake for 12 to 15 minutes in regular oven. 8-12 in convection oven. Makes 12.
