SALSA

2 (15-ounce) cans black beans, drained and rinsed
1 (16-ounce) can corn, drained
1/2 cup chopped fresh cilantro
1/4 cup chopped green onions
1/4 cup chopped red onions
1/3 cup fresh lime juice
3 tablespoons vegetable oil
1 tablespoon cumin
Salt to taste (THAT MEANS YOU HAVE TO TASTE!)
Freshly ground black pepper to taste (ditto)
1 cup chopped tomatoes
1 cup chopped avocado
1 (4-ounce) can green chiles
Hot sauce to taste (ditto) 

1) Combine beans, corn, cilantro, green onion, red onion, lime juice, oil and cumin in a large bowl and mix well.
2) Add salt and pepper to taste.   
3) Chill, covered for 24 hours at home.  We will refrigerate for 30 minutes.
4) Stir in tomatoes, avocado and green chiles IMMEDIATELY  before serving.
5) At that point you may add some hot sauce but be cautious.
6) Serve with corn chips or crostini.

Yield:  6 cups.
