Savory Wild Rice

8 ounces wild rice
3-1/2 cups chicken stock
8 slices bacon
2 small or 1 medium onion, chopped
1 teaspoon salt

  1. Combine rice and stock and bring to a boil.  Cover, reduce heat, and simmer for 50 minutes or until tender.
  2. While rice is cooking, fry bacon until crisp; remove bacon, drain on paper towels and then crumble; sauté onions in drippings. 
  3. Stir in cooked rice into pan with onions, add bacon and salt.
  4. Serve immediately.  Serves 8.
