CHILLED APPLE SOUP WITH YOGURT CHILLED APPLE SOUP WITH YOGURT
In the Summer there is nothing better than a chilled soup served with a beautiful salad and crusty French bread for a light wonderful easy meal. These cold soups fill the bill.
1 tablespoon butter
5 shallots, diced, or 1 medium onion, diced
1 medium leek, well washed and diced
4 apples, peeled, cored and cut into chunks
½ cup apple juice
½ cup buttermilk
1-1/2 cups plain yogurt
salt and freshly ground pepper to taste
Fresh cilantro, chopped
- In large saucepan, melt the butter and saute the shallots and leek for 3 to 5 minutes or until translucent. Add the apples, and apple juice and simmer for 25 minutes.
- In a blender or food processor, puree the apple mixture. Return mixture to saucepan and stir in the buttermilk and yogurt. Bring to a boil, then remove from heat immediately or separation will occur. Add salt and pepper and chill for 2 to 3 hours.
- Garnish with cilantro and serve immediately.This recipe will serve 6 to 8 people.
