PROSCIUTTO WRAPPED ASPARAGUS WITH GARLIC DIPPING SAUCE PROSCIUTTO WRAPPED ASPARAGUS WITH GARLIC DIPPING SAUCE
18 thin slices of prosciutto
18 Fresh asparagus
18 fresh basil leaves
18 wooden skewers, soaked in water for 30 minutes
SAUCE:
1/3 cup red wine vinegar
1 tablespoon chopped garlic
2 tablespoons Dijon mustard
1-cup olive oil
Salt and freshly ground black pepper to taste
- Place one piece of prosciutto on work surface, with short end parallel to edge. Slice prosciutto in half lengthwise Place 1 basil leaf at the end of prosciutto slice. Place 1 asparagus on top basil leaf and roll up shrimp in prosciutto.
- Put on sheet pan
- . . (Can be made one day in advance.) Wrap tightly with plastic wrap and refrigerate.
- Prepare water grill.
- Combine vinegar, mustard and garlic in blender. Gradually add oil in thin stream with blender on and blend well. Transfer to small bowl and season with salt and freshly ground black pepper.
- Grill until asparagus slightly golden3 turning frequently, on grill for about 3 minutes. Transfer to serving platter and serve hot with sauce.
