SPICY NUTS

 

2 tablespoons unsalted butter

2 tablespoons sugar

¼ teaspoon cayenne pepper

1/3 cup sliced almonds

1/3 cup pecans, rough chop

1/3 cup walnuts, rough chop

Sea salt and freshly ground pepper to taste

 

  1. Melt butter in a medium skillet over medium-high heat.  Add sugar and cayenne, pepper and salt and mix well.
  2. Stir in nuts.  Cook until nuts begin to brown, stirring constantly.
  3. Spread nuts on a tray covered with parchment paper.  Chill in refrigerator until set and cooled.
  4. Sprinkle over salads with dried fruit, fresh berries, goat cheese ar blue cheese.
  5. Store tightly covered, in refrigerator for one week or freeze in a zip lock for up to a month.
