CANTALOUPE SOUP CANTALOUPE SOUP
2 cups orange juice
2 cups apple juice
1 cup dry white wine
2 tablespoons tapioca
1 ripe medium cantaloupe
Salt
Cayenne pepper
Sprigs of fresh mint
- Combine orange juice, apple juice, white wine and tapioca in a saucepan and simmer over medium heat for 10 minutes.
- Cool mixture and chill. When juice mixture is cooled, prepare cantaloupe. Cut cantaloupe into cubes and purée in food processor in batches with cooled juices. Add pinch of cayenne and salt to taste. Be sure and save thin slices for topping with a dollop of sour cream,
