BROCCOLI RICE AND CHEESE CASSEROLE
1 medium onion, finely chopped
2 – 10 ounce packages of broccoli, cooked and drained
1 stick of butter
2 cans cream of chicken soup
6 cups of cooked rice
2 cloves of garlic
3 cups of shredded cheese, (sharp cheddar)
- Preheat oven to 350 degrees.
- In a medium skillet, melt stick of butter. Sauté onion until tender, and then add garlic, Set aside to cool.
- Steam broccoli until thawed, and then drain well. Allow to cool.
- Cook rice according to directions. (use any type of rice)
- It is important to allow the warm ingredients to cool before mixing everything together. Put in a 2 – 13 x 9 dishes, one if you do not need so that cheese will not melt too quickly.
- When sufficiently cool, reserve ½ cup of cheese and mix remaining ingredients together. Spread reserved ½ cup of cheese on top. Cover with foil. Bake for 20 minutes, remove foil and bake an additional 5 to 15 minutes, or until cheese on top is hot and bubbly. Serves 12.
