Lemon Potatoes 4 to 6 medium-sized potatoes
3 tablespoons butter
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon dried oregano or herbs de province
1 tablespoon fresh parsley, chopped
1 teaspoon salt
Freshly ground pepper – around 10 grinds

Peel potatoes and cut into 1-inch wedges. Heat butter and oil in large skillet. Add potatoes and lemon juice. Sauté to an even brown on all sides, turning to brown. Cover skillet and continue to cook until potatoes are tender, approximately 20 minutes.

Uncover skillet and sprinkle potatoes with all the seasonings. Mix and then serve immediately. Serve 6.
